Prime Rib Dinner for 4-5 ppl

Ingredients

  • Prime Rib Bone in 2-3lbs
  • 1 tsp oil
  • I sprig fresh rosemary chopped fine
  • 6 whole garlic gloves
  • 2 stalk of celery
  • 2 whole carrots
  • 1 onion
  • 1 tablespoons Kosher Salt
  • 1 teaspoons Coarse Cracked Pepper
  • 1 tablespoon Montreal Steak Spice
  • 1 Tablespoon parsley, dried or fresh
  • 1 cup of red wine for deglazing 

Instructions

Prep: Take of fresh Prime Rib 90 min before roasting

Peal garlic, take a small paring knives and poke slits in your roast, stuff the roast with garlic. 

Pre Heat Oven to 425 degrees for 20 min

In a bowl mix all your spices 

Rub your Prime Rib with Oil,spread all the spices thoroughly over your Prime Rib Rib Roast.

Place Roast in Roasting Pan or Cast Iron Fry Pan( I like)

Rough Chop your Vegetables and put them in your pan.

Put Roast in Oven at 425 degrees for 30 min, after 30 min turn down your oven to 325 degrees. Pour wine in the pan, this will deglaze the pan for dripping for the gravy

Roast should take about another hour or so, invest in a proper digital thermometer ( 10 dollars) pull the Roast at 135 degrees for Med Rare, 140 for Med. Let the Roast Sit for 20 to 30 min wrapped with foil( I know you want to cut into it) if you cut too early you lose a lot of juices in the roast.
