Spätzle
Spätzle are traditional German Egg Noodles that are quite easy to prepare and are a perfect side dish for so many European dishes. This is an easy recipe to make you might be a little intimated at first, but once you jump in its quite easy and so delicious.
Ingredients
- -4 cups of flour
- -2 tsp salt
- -8 large eggs
- -3/4 cup of milk
- -1 tsp black pepper
- -2 tbsp. chopped fresh parsley
- -1 tbsp. chicken bullion
- -1 cup melted butter
- -4 slices of diced bacon
- -1 med onion diced fine.
Instructions
Prep: Have a large pot with about 12 cups of salted boiling water
In a large fry pan sauté bacon until its about half cooked then add onions . Cook for an additional 5 minutes. Turn off heat, Bacon should be cooked but not crispy and onions translucent
Place flour, salt, pepper and parsley in a stand mixing bowl, then add milk, cracked eggs and chicken bullion to dry mixture. Turn on mixer and mix on slow for about a minute. Batter should develop bubbles. Let batter sit for 5 minutes.

- Chicken Bullion Base can be found at Costco or most super markets

Pour batter out of bowl and into the spätzle cutter or colander over the boiling salted water.

Let the noodles cook for about 2-3 minutes, they will float to the top. Once they float to the top use a spider or sieve to take noodle out.

Put Spätzle in a large bowl with the butter. Toss Noodles until the butter is absorbed.
Transfer Spätzle to the bacon onion fry pan and cook for an additional 5-7 minutes. This is my personal touch.

Final thoughts

A quick easy side dish, flavorful great to use with stews, braised items and schnitzel.
