Buttermilk Biscuits

Ingredients

  • -4 cups of sifted All Purpose flour
  • -4 heaping tbsp baking powder
  • -2 tbsp baking soda
  • -1 tsp salt
  • -8 oz or 1 cup of grated frozen butter
  • -2 cups ice cold buttermilk , don’t substitute. place in freezer 30 min before making biscuits.
  • -1/4 cup flour for rolling out biscuits
  • -1tsp bacon fat for greasing the pan
  • -1 tsp butter for greasing the pan
  • -1 egg,1 tbsp. buttermilk for egg wash

Instructions

Prep: Pre Heat oven to 425 Degrees

With a box grater, grate the frozen butter onto a piece of parchment paper, then place in a bowl. This is the most important step on making great biscuits.

Place all dry ingredients in a bowl, slowly toss the butter in the dry good mixture. Don’t over mix about 4-5 stirs with a wooden spoon.

Add Buttermilk slowly to the mixture, and stir about 5-6 times. This mixture will be wet and sticky this is perfectly fine.

Place biscuit dough on a floured surface, lightly sprinkle flour on top of the biscuit . Slowly start to fold the dough into 1/3rds. Slowly pat down the dough, don’t use a rolling pin. Every time you fold the dough you are creating a layer of flakiness and the butter melts and creates steam to make the biscuits flaky. Once you have your dough worked in with the 5-6 fold the dough should be 3/4 to an inch thick. This the perfect size.

  • Notice the biscuit dough is not over mixed.

Cut the biscuits with a biscuit cutter or old 10 oz soup can that has both ends removed. Do Not twist the cutter. Some people use a glass and twist the biscuit dough this makes the edges tough. Place biscuits in a cast iron fry pan that has been greased with butter and a bit of bacon fat, so the biscuits just touch in the pan, don’t over crowd.

  • -Beat Egg and milk together to make an egg wash, with a pastry brush, bush this mixture on the biscuits.
  • Place the pan in a 425 degree oven for about 20-25 minutes.
  • Once biscuits are done brush butter on top as soon as the leave the oven, take out of pan and place in a baking basket.
  • These are great with sausage gravy or fresh jam.

Final thoughts

Buttermilk Biscuits are a great on a weekend morning for breakfast. I have 2 secrets on making these biscuits, use frozen grated butter in this recipe and don’t substitute. Don’t over mix the dough only fold it a max of 6 times. These are light flaky biscuit and perfect with Southern Sausage Gravy.
