Southern Fried Chicken

Over Night Marinade/ less than 1 hour

Ingredients

  • -1 litre Buttermilk
  • -1 Whole Frying Chicken 3 to 4 lbs Cut into pieces
  • -2 Cups of Flour
  • -2 Tbsp Baking Powder
  • -2 Tbsp Cornstarch
  • -1 Tbsp Salt
  • -1 Tbsp Pepper
  • -2 Tbsp Chicken Seasoning or Rub ( Traeger ,Stubbs or Montreal Chicken)
  • -1 Tsp Savory
  • -1 Tsp Garlic Powder
  • -1 Tsp Paprika
  • -1 Onion Powder
  • -1 Tsp Parsley
  • -Vegetable or Peanut Oil to cook Chicken in.
  • -Cast Iron Pan or Deep Fryer

Instructions

Prep: Cut Chicken into pieces season with 1/2 salt and 1/2 pepper and place buttermilk and chicken in a bowl or zip lock bag. Throw in fridge overnight.

Drain Chicken in a colander.

Mix all the dry ingredients into a bowl or zip lock bag including the spices.

Dip Chicken in the flour mixture only a couple pieces at a time in either a bowl or zip lock bag. Press chicken into flour mixture and shake excess off and place on a tray.

Heat oil to 300 degrees, using a Deep fryer or Candy Thermometer for Cast Iron Fry Pan.

Pre-Heat Oven to 325 F

Cook chicken for 8 minutes until golden brown, and place on a pan with a rack. Once all the Chicken is browned , place in oven for approx. 20 min. Place a digital thermometer in the thigh, once internal temp is 165 degrees your chicken is cooked.

Final thoughts

Southern Fried Chicken is a staple item in my cooking repertoire. It’s a favorite of mine and has been for years. Serve with mashed potatoes and country gravy.
